Baked Stuffed Wasabi Potatoes

This was my dinner last night, and how good it was!!!

potato
fresh wasabi (I used half a rhyzome, but it could have used more.)
parmesan
salt and pepper
butter, half & half, sour cream

Underbake the potato slightly (so it still has some character) and cut a slit off top. Remove potato innards and mash together with butter, warm half & half and the sour cream mixed with grated wasabi. Restuff the potato with this.

Heat the oven to 425. Top potato with parmesan and reheat the whole thing for 20 minutes.

This and a salad make a deeply satisfying dinner.
