Don Durand's Bread

This is the bread that my father-in-law, Don, makes. It's wonderful and makes the best toast!

1 C + 2 T Water
1 1/2 t Salt
2 T Sugar
2 T Dry Milk
2 T Vegetable oil
3 cups Flour
5 T Wheat Germ
1 1/4 t Yeast

In a large bowl or stand mixer, stir together all of the dough ingredients. Knead the dough for 5 to 8 minutes, until it's smooth and supple, adding more water or flour as needed. Cover the dough and let it rise for one hour, or until it's doubled in bulk.

To make the dough in your bread machine, place all of the ingredients into the bucket, program for Dough or Manual, and press Start. Let the machine run through its cycle.

Transfer the dough to a lightly floured work surface and shape into a smooth log. Place the log into a lightly greased bread pan, cover, and let the loaf rise until very puffy.

Bake in a preheated 360°F oven for about 25 minutes, until the loaf is golden brown.
