Make a bunch of these ahead of time and wrap individually in waxed paper. They reheat in 30 seconds and you're good to go! How's that for fast food?

1 Thomas' Light Multi-Grain English Muffin
1 egg white
1/2 wedge Laughing Cow light garlic & herb cheese
1 slice of Canadian Bacon (look for 3 slices = 60 calories)
1/2 ounce Cabot Vermont 75% Reduced Fat Sharp Cheddar Cheese


LIGHTLY spray a non-stick pan with cooking spray.
Cook egg white, seasoning with salt, pepper, "Slap ya mama" Cajun Seasoning, or what ever you like.
Toast the English muffin.
Spread the Laughing Cow cheese on the bottom half.
Top with Canadian Bacon, Egg, Cheddar cheese.
Burn yourself with hot coffee and pretend you're at McDonalds.

Make ahead:
Prepare the same way, but don't bother toasting the English muffin. Let the egg cool before assembling the sandwich, then wrap the whole thing in waxed paper and refrigerate. Reheat, still wrapped in waxed paper, for 30 seconds.
