Hamburger Buns

1 cup (8 ounces) milk
4 tablespoons (1/2 stick, 2 ounces) unsalted butter, soft
2 egg yolks
3 cups King Arthur Unbleached All-Purpose Flour
1 1/2 teaspoons salt
1 tablespoon sugar
2 teaspoons instant yeast

Topping (optional)
liquid egg whites in a spray bottle
sesame seeds (or the seeds of your choice)


Throw everything into the bread machine on manual.
When the first knead cycle stops, spray the top of the dough with non-stick spray and cover the work bowl with plastic wrap.
Remove the wrap when the second knead cycle starts.
Remove dough after the second knead cycle ends.
Divide dough into 8 equal pieces and roll each into a smooth ball.
Place the dough balls on a lightly oiled baking sheet and cover with a piece of plastic wrap that has been sprayed with non-stick spray.
Set aside and let rise until full and puffy.
Spray the tops with liquid egg white and sprinkle with seeds.
Bake at 375 12 to 15 minutes until golden brown.
(Internal temp should be 205 - 210 degrees on an instant read thermometer.)

Variation: onion buns
Chop 1 medium white onion and slowly cook in some olive oil and butter until lightly browned.
Let cool. Chuck these into the bread machine during the second kneading cycle.
