Less calories than a Yoplait Light yogurt, and a hell of a lot more tasty!

Per serving:
1 yellow corn tortilla
2 egg whites
salt & pepper, to taste
2 T salsa

First, try to find some really good YELLOW corn tortillas. They have tons more flavor than the white corn tortillas.

Second, look for a good salsa that's fat-free and only 10 calories per 2 T. My favorites are the ones from Frontera Kitchens, especially the Tomatillo, Corn & Poblano, and Guajillo.

Lightly mist a non-stick skillet with non-stick spray (like Pam). Go easy on the spray.
Plop the tortilla into the skillet and heat it over medium heat, flipping a couple of times, until soft.
Don't overcook the tortilla or try to get it crispy or it will get leathery.
Place the tortilla on a warm plate and set aside.
Reduce the heat to medium-low and pour in the egg whites.
Add salt and pepper and cook until the bottom is set.
Flip and pour the salsa around the egg whites.
When the egg is done, slide the whole mess onto the warm tortilla.
