Korean Cucumbers
Bubba Durand


3 1/2 cups sliced English cucumber (about 1 large)
1/4 t kosher salt
2 T minced green onions
1 T rice vinegar
1 t sugar
1/2 t mild Korean red pepper flakes (Gochugaru*)
1/2 t dark sesame oil
Toasted sesame seeds to garnish

Combine everything except sesame seeds and mix well.
Top with toasted sesame seeds.
Serve chilled or at room temperature.
