Low-fat Meatloaf

The addition of oats soaked in milk keep this low fat meatloaf from being dry. You can use other types of ground meat in this recipe (lamb, pork, veal, etc.), just make sure they're extra lean. I try to avoid ground turkey breast, however, because I think it makes the meatloaf too bland.

1 1/4 cup Quaker Oats Quick Oats Cereal
3/4 cup fat-free skim milk
1/2 cup Egg Beaters
2 medium onions
2 cloves garlic
1 1/2 tsp table salt
1 tsp black pepper
3 pounds raw extra lean (96/4) ground beef*
2 Tbsp Worcestershire sauce

Mix oats and milk. Set aside.
Peel and chop or grate the onions or grind them in a food processor.
Peel and mince the garlic cloves or crush them in a garlic press
Combine all ingredients together and mix well.
Pack into a loaf pan that has been sprayed with pam.
Bake at 375 for 1 1/2 hours or until the internal temp reaches 150.

Let rest for 15 minutes before slicing.
Makes great meatloaf sandwiches the following day.
