Pork and Shrimp Fried rice

2 egg whites
1 whole egg
1 tsp extra light olive oil
2 cup onion(s), chopped
6 oz Pork, tenderloin, cooked, chopped
3 oz shrimp, cooked and chopped
6 cup cooked white rice, day-old (not freshly made)
1/2 cup frozen green peas
4 Tbsp soy sauce
1 scallion

Beat egg whites and whole egg together.
Spray a large nonstick skillet with cooking spray.
Scramble egg in hot skillet.
Remove and set aside.
Saute onion in 1 t extra light olive oil until softened, but not brown.
Add pork and shrimp and saute until hot.
Add cooked rice and frozen peas.
Toss and cook until peas are thawed and everything is heated through.
Add soy sauce, scrambled eggs, and sliced scallion.
