Sam and Cheese dip

1 Sam Adams Boston Lager
2 1/2 ounces aged gouda, cut into 1/2 inch chunks
2 1/2 ounces pepper jack cheese, cut into 1/2 inch chunks
2 1/2 ounces cheddar, cut into 1/2 inch chunks
8 ounce regular (not light or soft) cream cheese (fridge temp, not room temp)
1/2 pound bacon, cooked until crispy, crumbled
2 green onions, minced (both white & green parts)

Process gouda, pepper jack and cheddar in food processor until finely minced.
Add cream cheese and enough beer to form a smooth dip when processed. Drink the rest of the beer.
Add bacon and pulse until minced.
Remove from food processor and stir in green onions by hand.
Serve with crackers.
