Sloppy Josés

A cross between sloppy joes and taco meat.

2 pounds lean ground beef
1 cup chopped celery
1 cup chopped onion
1 T olive oil
1 4-oz can green chiles, chopped
4 cloves garlic, minced
1 15-oz can tomato sauce
1 cup ketchup
2 cups water
1/2 cup (or 2 packets) taco seasoning mix
1 T worcestershire sauce
2 T cider vinegar
1 T yellow mustard
3 - 4 T brown sugar
2 T ground ancho chile (or mild chili powder)
1 t Mexican oregano
1/2 t freshly ground black pepper
1/2 t ground cumin

Brown the ground beef until cooked through.
Pour beef into a mesh strainer and set aside to drain.
Sweat the celery and onions in olive oil on medium-low heat until soft.
Add green chiles and garlic. Cook 2 more minutes, then add beef.
Stir in remaining ingredients.
Cook on med-low to med heat, stirring occasionally, until thick enough to pile on a bun.
