St. Louis Slinger

The Slinger is a Midwestern diner specialty typically consisting of two eggs (any style), hash browns, and a hamburger patty (or any other meat) all covered in chili (with or without beans) and generously topped with cheese and onions. The eggs can be any style. The Slinger is considered to be a St. Louis late-night culinary original. It is described as "a hometown culinary invention that might account for St. Louis' high rate of heart disease: a mishmash of meat, hash-fried potatoes, eggs, and chili, sided with your choice of ham, sausage, bacon, hamburger patties, or an entire flippin' T-bone steak. It's dirt cheap, damn good and a drunk's dream."

Ok, so back to reality. Here's a much more reasonable recipe...

1 egg
cooking spray
1/2 cup "Simply Potatoes" shredded
1/3 cup Kraft 2% Milk Shredded Sharp Cheddar Cheese
3 T Chili-dog sauce
Chopped white onions
Tabasco sauce
Salt & Pepper

Lightly spray a non-stick pan with cooking spray.
Cook shredded potatoes until hot and crispy on the outside. Slide the cooked potatoes onto a plate. Spray the pan again and cook the egg over-easy (leave the yolk runny). Slide the egg on top of the hash browns. Top the whole thing with chili, cheese, onions and tabasco. Mmmmmm. Now where are the Tums?
