The best cheese pizza EVER

  1. Make this crust, and divide into 8 small, thin pizzas.
  2. Prebake for about 2 minutes @ 450 on preheated stone, in top half of oven.
  3. Cover the crust with fresh Thai basil leaves.
  4. Cover that with freshly grated whole milk mozzarella AND provolone AND gruyere.
  5. Cover that with crumbled fresh goat cheese.
  6. Drizzle with GOOD extra virgin olive oil, coarse salt, and freshly ground pepper.
  7. Top with thin slices of fresh roma tomatoes.
  8. Sprinkle a tiny bit of salt on the tomatoes.
  9. Bake for about 5 minutes @ 450 on preheated stone, in top half of oven.
