Tzatziki Sauce
Bubba Durand

12 ounces plain Greek Yogurt* (I use Fage)
1/2 cup grated English cucumber
1/2 t salt
1/4 t finely minced fresh garlic
2 t freshly squeezed lemon juice

*full-fat, 2%, and 0% all work equally well.

Mix the cucumber and salt in a bowl and set aside for 1/2 hour.
Squeeze the excess liquid out of the cuke and mix the cuke with the yogurt.
Stir in the remaining ingredients.
